Fiesta Bean Salad Obsession

Ever since a friend’s wedding a month or so ago, I’ve been obsessed with bean salad. This one in particular. It’s been made weekly and served as a salad, on a salad, with burgers, chicken, in an omelette even! So delightfully yummy and easy.

Super Simple:
For every can of black beans, add one red pepper, one red onion (sm), one cup of corn, cilantro, olive oil, lime juice (fresh is ideal), and salt to taste. I tend to load up on cilantro and lime, but do whatever floats your boat:) It’s best to make it in advance and let it marinate for a few hours at least to bring out the flavours.
