Perfect Jalapeño Poppers

I love spice. So when I see the perfect jalapeños for making poppers, I scoop them up! Which is what happened yesterday.

All you need are jalapeños, cream cheese (I used the new PC Greek Yogurt one – and loved it!), shredded cheese, panko, green onions, an egg, and some paprika.

After cutting and seeding the jalapeños, fill them with a mixture of cream cheese, shredded cheese, and sliced green onion. Then dip them in the egg wash, followed by a roll in the panko & paprika mix. I find it’s helpful to use a little spoon so you get even paprika distribution.

Bake at 375 for 20 minutes or so. I usually just let oozing cheese guide me:)

They were delicious and super easy! Great for entertaining. And, as it turns out, a perfect burger topper! The Jalapeño popper burger topper:) I just cut up a few of the leftover ones and topped my burger with it. Heavenly.

    These look SO good. Are the super spicy? Or manageable for someone like me (I'm a baby with spice!)? Either way I think I have to try them.

      Thanks Tiffany! These ones were quite spicy - but super yummy! My DH tends to stay away (which is fine, more for me, LOL!) because he's not too keen on super spicy foods. Worth a try for sure:)

      super easy to prep ahead too - just have all the peppers halved and seeded, the filling made, and the panko mixture - and then when you are ready to cook you just need to do a quick assembly:)

    Mouthwatering!! I love jalapeno poppers... I just wish they weren't so dang time consuming to make... but then again, that could be because I always have to wrap mine in bacon! Yum!
