Simple Spring or Summer Entertaining Menu

It’s no secret how much I love entertaining and sharing time with friends over a great meal. It’s even better when the menu comes together perfectly, is easy to prepare, and is thoroughly enjoyed by all. This was the case last weekend. So much so I just HAD to share.

So, if you’re looking for a simple, tasty, spring or summer entertaining menu I’ve got it my friends.


I almost always start off with charcuterie because it’s easy to prepare…everyone can nibble, and the opportunities for presentation are endless.


I love serving soup. Mostly because I love making and eating soup. This soup has been in heavy rotation since I first made it a few months ago. The recipe is so simple and SOOO good for you. If you are looking for a new cookbook to add to your collection, Yum & Yummer is definitely one I would recommend. I’ve made a bunch of recipes from this book and have loved every one.


Another huge WIN in the recipe department >>> this peanut sauce from Once Upon a Chef, along with her sriracha lime marinade >> served on a big salad (ingredients I used below). So tasty, so full of flavour. I marinated both shrimp and chicken thighs (so much tastier than the breasts) and loved the combo in the salad.

Salad ingredients:

  • rice vermicelli noodles (they are hiding at the bottom under everything)
  • thinly sliced red cabbage
  • thinly sliced red pepper
  • cucumber (seeds removed)
  • green onions
  • carrots (pre-cut julienne style)
  • radishes
  • a bag of pre-cut PC kale-slaw
